Toshikoshi soba, or “year-crossing noodles” are a dish traditionally prepared on New Year’s Eve and eaten just as the new year begins. The noodles are made with buckwheat and cooked in a soy-based broth, and are frequently enjoyed together with chopped vegetables, fish paste, tempura, or other ingredients.
